The best way to learn is by doing it and explaining it to others. In my biased opinion, Linear Algebra is one of the most applicable areas of mathematics. Completing a project in a topic that can be cast in Linear Algebra terms will help you appreciate the beauty of this rich field and give you something to brag about.
